It's November already, really?
Well, I have survived my first week at Macy's, just 4 weeks to go! I must say I am having a good time but I miss doing exactely as I please...
Going to try a couple of new things this week that look easy, the rest are repeats we really like. The Foil Pack Chicken & Broccoli caught my eye on Pinterest because it's a new way to cook chicken and it looks quick and easy. I am making it just like the recipe but I am not using the stuffing to save on calories. Next I am trying the Mexican Rice Casserole, also from Pinterest. I am using brown rice instead of white, and check your pantry for the seasonings it requires and if you don't want to purchase all of them I am thinking you can substitute a package of Taco seasoning. The Baked Pork Chops and Tilapia are both easy with little prep time. If you are not crazy about the sauce for the pork chops, use some mushroom soup and serve them with rice or noodles. The Honey BBQ Meatloaf is something I tried weeks ago and we loved it. I will double my recipe so I will have some leftovers for lunch, same with the Chicken Verde Soup. I gotta say I have loved coming home from work and dinner is almost reading except for cooking a veggie or side dish.

Next Weeks Menu!
OK my friends, here is next weeks menu! Not much to buy this week because we are eating out Monday (Trunk or Treat at ChicFilA) and Friday because I start a Christmas job a Macy's on Monday and I know I won't want to cook by Friday so I will be picking up some pulled pork from Shorty's on my way home. WooHoo! You will be able to tell over the next couple of menu's that I will be working full time for the next 6 weeks. Meals will be simple and my sweet hubby will help because we are not big on eating out a lot. The best way to get the menu and shopping list to print is to double click on it and when it opens, right click on it and "save as picture", then go to your pictures and open and print it. If that doesn't work for you, let me know and I will email it to you! Hope you all have a great week of family dinner!

Happy Monday, Go Rangers!!!
Good morning my "menu" friends! This silly blog is acting up again so I didn't post a menu last Friday. I did make a new menu for this week so if you want a copy just email me at tami@bereantoday.net and I will send you a copy! I start to work at Macy's next Monday but I will try to keep up the menu planning as best I can! Praying all of you have a great week around the dinner table!

First Week of October Menu!
Wow, where has the time gone this year? I can't believe the first week of October is behind us.
I am looking forward this week to a couple of quick and easy prep meals, plus trying some new recipes.
The first is Pork Chops in the crock pot with a new marinate I got from some new friends, can't wait to try it and I think I may even add some Red Pepper flakes to give it some spice! The Street Taco's and Breakfast for Dinner nights are easy and quick and can both be very low calorie. I normally use Cugino's Creamy Potato Soup with some added ingredients. I have been looking for a from scratch recipe that looks easy. The Baked Potato Soup - Crock Pot Style will be my first attempt, I plan on using low fat cream cheese, and using dried onion and minced garlic for convenience. The Angel Chicken Pasta is another Pinterest recipe I have been wanting to try, leave out the mushrooms if you don't like them and I am serving mine over whole wheat angel hair pasta. Last but not least are the Candy Corn Sugar Cookies from a new blog Jamie Cooks it up!. I look forward to finding some other fun recipes on her blog! Well, that is it for this week. I won't be posting a Menu next Friday as I will be at the War Eagle Craft Fair in Arkansas! I have about 8 freezer meals from all the things I have been cooking lately so starting the 16th it's officially freezer meal week!! No cooking for me, woohoo!!

Goodbye September Menu!
Hope you all have had a fabulous Thursday!! I had the pleasure of going to Canton with a friend, saw girls I went to high school with and got offered a job! It was a good day!
I am looking forward to trying the Crock Pot Ravioli Casserole. I am going to use fire roasted tomatoes in place of the stewed because I love the flavor, and I use dried minced onion because I hate cutting up onions. The Baked Parmesan Tilapia is a repeat but it was really good and will be my "go to" baked fish recipe. The Turkey Lettuce Wraps will be very low calorie or WW friendly and I look forward to trying them. I am seasoning my meat with packaged taco seasoning and using pre made Pico and Guacamole to make it a quick meal! I realize you may not have All of Us soups but you can order them online or stock up at Canton next time you are there. I keep thinking if I make some yummy fall soups it will get cooler. So far it's not working but, I refuse to give up!

This week's menu!
Well, as of today my attachments will open and print! This week is a pretty simple menu. Both the Chicken Enchilada Casserole and Ravioli Lasagna are quick and easy and should yeild some leftover for another night or lunches for your hubby! The Country style pork ribs are simple and take very little time and you can actually shredd any leftovers for sandwiches another night or freeze it. Enjoy dinner time this week with your family!

September 16th Menu
Happy Friday my friends! Here is what we are cooking up this week! Cooking a Turkey in the crock pot with some chicken broth then about an hour before its ready I am going to cover it with a can of whole berry cranberry sauce and serve with some rice and a veggie. The Dressed Up Sloppy Joe's will be the first I have tried in a long time but I remember my mom making them so I am going to give it a try. I am going to double it and freeze half, I hope they are good! Cugino's Mama's Minestrone is a quick and great tasting soup that will be even better with the Pizza Muffins I found on Pinterest. I have made them twice once with mini pepperoni (much easier than chopping pepperonis up) and again with ground hamburger. My grands love my pancakes and I use the Ihop Buttermilk Pancake Recipe, we love breakfast for dinner! The Autumn Chopped Salad I found on Pinterest also. I am adding some chicken strips to make it a little more filling. Lastly I am going to try the Cinnamon Roll Cake Sunday night for the New Members class, I hope it is as good as it sounds, I will let you know!
I put everything on the shopping list for each recipe. Many items you may already have in your pantry and don't need to purchase, especially for the cake and pancakes.
