Wow, January is almost gone and Spring is right around the corner! If you live in Texas, Winter and Spring are rotating every other day....
Just wanted to let you know that the Crock Pot Bolognese from last week was fabulous and my experimental Jalapeno Tilapia turned out great! It was almost as good as Carino's but only 450 calories vs about 1500. I will be making it again!
We love Chicken Enchiladas but I don't like making them so I made up my own casserole version a couple of years ago. Its very easy and great served with beans, veggies or a salad. We like to top ours with fresh pico and jalapenos! We are having Salmon this week and I know some people don't like fish so just have some other kind of grilled meat/chicken. You can always grill extra chicken to save and use for the enchilada casserole, I have done it both ways and either way is very good!
I hope there is something here you will enjoy eating with your family. Due to the business of my week and then vacation, I won't be posting another menu until February 17th!

Next Weeks Menu!
Here's what me and the hubby are eating next week!
I am experimenting with a Jalapeno cream sauce to go with baked Tilapia, I am attempting to see if it tastes anything like the dish at Carino's. It probably won't but I am gonna give it a shot! Please feel free to skip it if you don't like fish. I have been wanting to try a Bolognese sauce for sometime and came across a recipe for my crock pot, Crock Pot Bolognese from Skinny Taste looks easy and I can't wait to try it. It also lists the WW points plus at the bottom of the recipe, serve with whole wheat pasta and its a healthy Italian meal! There are some great recipes on this site, check them out!
Everything else is easy this week, and its a pretty small list of groceries for 6 meals.
Last week I came across a recipe for Honey Sauced Chicken and since I had some frozen chicken in the freezer and all the sauce ingredients in my pantry so I gave it a try. The hubby and I really liked it and served over brown rice with some broccoli it was a great low calorie Chinese dinner. I didn't add it to the menu this week but it would be a great substitute for the tilapia dinner.

What we are eating next week!
Here is next weeks menu! I realized the other day we haven't had chili since last winter and we are ready for some!
I am trying the Holiday Chicken Salad I found for a change of pace, we like it on wheat bread or wraps.
I cooked 2 turkeys last month and froze the leftover meat for soups and casseroles. I am using some in the minestrone soup, we tried it last month and really liked it! I use more meat than what the directions say but we both like a hearty soup that your not hungry an hour after you eat..
Its a short and simple grocery list, hope there is something you will enjoy!

Happy New Year Menu!
Well, the year is almost over. Me and my love muffin are spending the evening babysitting some of our grands, I guess our days of parting are over but, I wouldn't change a thing!
Not much to buy this week in the way of groceries, I have stuff I didn't make from the December 12th Menu and I have been making freezer meals for the 2 of us over the last few weeks that we are eating this week.
I look forward to trying some new things this year from Skinnytaste. I want to lose about 30 lbs by my Anniversary in June so I need to get on that!

Christmas Break Menu!
I love this time of the year and it goes by way to quickly! So, the next 2 weeks there ain't gonna be much meal planning. It's gonna be a fly by the seat of our pants, eat out, eat leftovers, run to the movies, shop, visit friends, sit at home watching Christmas movies until the first of the year! lol I have a pantry & freezer full of food that we will be enjoying so we can focus on spending time with our friends and family instead of cooking. Below is my grocery list and a few things you might want to make for your family, along with a couple of recipes I am making for my family on Christmas! Since Christmas Day is on a Sunday, we are having sandwiches for lunch since we will all be meeting up at the Mills for lunch. We didn't want Memaw to be home cooking all day so we have talked her into a no fuss day filled with celebrating the birth of our Savior, then some fun and fellowship with our families! I will be posting a new Menu for January 2nd, and let me warn you now its, gonna be pretty low calorie stuff. I leave for a cruise on February 5th! : )

What the Mills are eating next week!
Well, my month off is over, I am back to being just a domestic goddess!
Even though I have been cooking during the last month, it was mainly some family favorites and a lot of meats and veggies. My goal was to lose 5 lbs while I worked and I lost 7! I am looking forward to trying some new things next week along with a yummy pork roast & some jalapeno hot dogs.
The first is Baked Pesto Chicken that I found on Pinterest, it looks easy and low calorie! Next is Slow Cooker Jambalaya that I also found on Pinterest, shocker I know.... Check your pantry, you may not need to buy all the spices the recipe calls for and if you don't like smoked sausage just double the chicken. I also buy the already chopped onion and green peppers to cut down on the time. Lastly I am trying the Nutty Oat Pancakes from The Southern Lady Cooks blog. I love pancakes (any kind really) but especially pancakes with "stuff" in them! Check out her site, she has some great recipes!

November 11, 2011 Menu!!
Well my friends, week 2 of my seasonal job is almost behind me! I am having a good time, meeting some new people and seeing some I haven't seen in a while but I will be glad when its done and I can get back to my normal routine.
This weeks menu is another simple one, its a challenge to get home at 6:30 and then get dinner ready. I am thankful I have a husband who pitches in and helps!
I just realized I didn't say how much butter to use for the Alfredo sauce, its 1 stick!
